Creamy Spanish Style Chicken


150-200g sliced chorizo
800g chicken fillings, sliced
200g baby spinach
200ml cream
50ml sour cream
2 TBS paprika
3 TBS olive oil
1 TBS italian herbs
1 tsp ground coriander
Salt and pepper to taste
Chilli flakes for garnish


Place oil in frying pan and heat.
Fry chorizo and chicken until chicken is cooked through.
Add spices and herbs and salt and pepper.
Add cream and sour cream.
Cook on medium heat until sauce thickness.
Add baby spinach and allow to wilt down.
Adjust salt to taste before serving.

Chocolate Chia


1 can coconut cream
3 TBS cocoa powder
1 tsp vanilla
Pinch salt
2 TBS xylitol
4 tbs chia seeds

Place all ingredients into a bowl and mix well until mixture is smooth.
Decant into 5 ramekins and refrigerate overnight.
Enjoy with berries of your choice!
