5 chicken fillets, sliced thinly,
a tbs chopped garlic,
about a thumb of ginger sliced finely,
1 can coconut milk,
butter and a bit of coconut oil,
spices of your choosing, i used Cajun spice from carbsmart and smoked paprika,
a head of half and half Broc and cauli,
2 handfuls baby spinach
And a punnet mushrooms.
So, oil and butter in pan, add garlic and ginger, fry a little, then add mushroom and chicken, fry until browned, then add the rest of the stuff.
Put on medium heat and cook till veg is to your liking. One pan, super easy 🙌🏼
