Veggie & bacon soup


Ingredients:

1 bunch celery leaves
1 cup soaked split peas
400g chopped bacon
1/2 onion
1 bunch parsley
2 large carrots
2 leeks
4 turnips
2 TBS oil of choice
Salt and pepper to taste

Method:

Wash, peel and chop all veggies.
Brown bacon in pot, add chopped onion.
Add the oil and fresh veggies and allow to sweat off in the pot for 5 minutes, stirring occasionally.
Add the split peas and enough water to come halfway up your veggie and bacon mixture.
Bring to the boil, reduce heat and summer, covered, until split peas tender.
Take masher and mash some of the veggies leaving the rest chunky.
