Meatballs in a Tomato Sauce - with hidden veg


Ingredients:

300g mince

1 egg

1 tbs paprika

1 tbs parsley

1 large finely grated carrot

80g grated cheddar

Salt and pepper to taste


For the sauce:

1 tbs olive oil

1 tin chopped tomato

1 tomato paste

1 cup water

Mixed herbs

Salt and pepper to taste

Sweetener to taste


Method:

For the sauce:

Mix all ingredients together in a pot and allow to simmer, uncovered, for 10-15 minutes.


For the meatballs:


Mix all ingredients together until well combined 

Make heaped tablespoon sized meatballs

Fry in a non stick pan until browned on all sides

Add to sauce and cook for a further 10-15 minutes

Serve with your favourite accompaniment
