Vanilla Cupcakes


Ingredients:

1.5 cups (150g) sunflower OR almond flour
1/2 tsp baking powder
Pinch salt
3 tbs oil of choice (melted butter or HO sunflower or melted coconut)
2 eggs
1.5 tsp vanilla
6 tbs xylitol (or to taste)

Method:

Preheat oven to 180C.
In a bowl, mix together dry ingredients.
In a separate bowl whisk together eggs, oil and vanilla, until frothy.
Fold in dry ingredients.
Divide between 6 cupcake holders or a lined muffin tray.
Bake for approximately 20 mmin or until skewer inserted comes out clean.
