Tuna Melt

A great way to get veggieals into fusay eaters is disguising it.

We all know how great fish is for kids, and this dish incorporates veggies and fish.

It just so happens that it's pretty delicious too.



Above is a fully baked variety you slice into portions, and below is a single version great for lunch boxes!


Ingredients:

4 tins tuna, drained
4 tbs cream cheese
1 tbs psyllium or 2 tbs heba
1 spring onion
Few stalks chives
1 cauliflower riced
1 egg
1 cup cheese
Salt and pepper to taste





Method:

Preheat oven to 180C.
Mix all ingredients together in a bowl.
Line baking tin or oven proof dish with baking paper.
Press down in dish.
Bake for about an hour (or until firm).
Serve with lemon wedges, mayo and a salad etc.

Alternatively, press down heaped tablespoons in muffin cases in a muffin tin.
