Ingredients:
Pork roast
Salt and pepper
Lemon juice
Mixed herbs
Method:
Score skin of pork.
Turn around, squirt with lemon juice, then sprinkle herbs onto the meat side of the pork. Grind some pepper and sprinkle some salt on. Place the pork, meat side down, in roasting dish.
Taking paper towel long, dry the skin thoroughly, then sprinkle liberally with salt.
Cover roasting dish and bake at 160 for 2 hours.
Remove the lid, dry the skin again, and sprinkle salt on again - and place under the grill.
Keep an eye on it so it doesn't burn.
Allow the skin to crisp up.
Remove and serve!
