Lasagne Style Cauliflower

A dish was made when we went to a braai a month or so ago, but I never asked for the recipe.
I could remember the flavors well, but I have tweaked was what there to what we enjoy at home.


1 head cauliflower
1 tin chopped tomatoes
200ml cream
50ml cream cheese
1/2 cup grated cheddar
Salt and pepper to taste
1.5 tbs Italian herbs
2 tsp sweetener (optional)


Open the can of chopped tomatoes and decant into a pot.
Place the pot over medium heat, add sweetenet, salt, pepper and Italian herbs. Allow to cook through for about 5-10 Minute which will reduce the liquid.
While this is being done, chop the cauliflower into florets and steam with salt until desired tenderness is reached.
Once cauliflower steamed, place in oven proof dish.
Mix cream cheese, cream, and cheese together and mix into the cauliflower.
Top with the tomato mixture and then a generous helping cheese.

Grill in oven until done.
