Ingredients:
3 smallish butternuts
Salt and pepper to taste
3 tbs cream cheese
150ml cream
1 cup chopped spinach
1 tbs garlic
50g blue cheese
80g grated cheddar
Some extra grated cheddar for tops
Sprinkling of crushed chillies
Herbs for topping
Method:
Half and hull butternuts as seen above. Season with salt and pepper.
In a bowl, mix together spinach, cheeses, garlic and cream.
Divide into butternuts.
Top with grated cheddar, sprinkling of chilli and herbs, then bake in a 180C oven until butternut tender and cheese browned. (Around 45 mins depending on oven)
Serve warm.
