Banting Pepper Steak Pies

For The filling:

400g beef pieces
1 tbs heba OR 1/2 tbs psyllium
Salt to taste
1 tbs green pepper corns
1 tbs ground black pepper
1 tsp white ground pepper
1 onion
1 tbs oil
200ml water


Fry beef and onion in oil. Add the peppers and season to taste.
Add water and allow to cook down.
Add heba or psyllium and mix well.
Cook until mixture reduced.

The pastry below can be used for any pies too.

For the Pastry:


130g Sunflower seed flour OR Almond Flour
180g grated cheddar cheese
Pinch of salt
2tbs cream cheese
1 egg

1 extra egg for eggwash


Preheat oven to 200C.

Weigh the sunflower seed flour and add to microwave safe bowl.
Weigh out the cheese.
Stir the two together, then microwave on high for 1 minute.

Remove from microwave and mix together.
Microwave again on high for 45 seconds.
Mix well to combine, then add the cream cheese and egg, mixing well to combine.
Add whichever flavors you enjoy to this dough too.
(I added finely diced spring onion)

Between two sheets of baking paper, roll out the dough to a large rectangle (about 40cm x 25cm).
Remove the top layer of baking paper, and place on a baking sheet.

Using the pie cases, cut slightly bigger circles than pie cases.
Grease pie cases.
Lift the dough and put into pie case.
Add the filling.
Using another pie case, cut out a perfect circle to place on top of the pie bottom and mixture.
Press edges down with a fork and cut off excess dough with a sharp knife.
Make holes on top of dough.
Beat the one egg, and using a brush, brush the tops of the pies.
Place on a baking sheet.
Bake for 45 mins.
