Banting Marshmallows


My kids (mostly my 4 year old) LOVE marshmallows but no one sells Banting friendly ones - well, now you can easily make it yourself at home!


Ingredients:

2 tbs powdered gelatin
1/2 cup ice cold water
Between 3/4 cup (161g) and 1.5 cups (322g) sweetener
1/2 cup boiling water
1 tsp vanilla
Dessicated coconut (optional)


Method:

Mix gelatin with ice cold water and set aside.
Add sweetener to boiling water in a pot and stir till dissolved.
Bring to the boil, and leave untouched, boiling, for 5 minutes (do not stir).
Remove from the heat.
Add vanilla and gelatin mixture.
Stir in until dissolved.
Allow mixture to cool to room temperature.





Once cooled, whisk until stiff peaks are formed.
Press down and smooth in well greased square cake pan.
Place in fridge until set (takes less than an hour).
Remove from fridge and slice into squares.
In a pan, lightly toast coconut until browned.
Roll squares of marshmallow in coconut.
Enjoy!

Recipe makes 36 squares that are 4cm x 4cm x 2cm

  2. Definitely going to make this it's an all time favourite of mine...but what sweetner did you use I can't stand the taste of stevia in baked goodies is xylitol ok

  3. Tried 4 times. Each time it ended up just a gloppy goo. Are you sure it's 2 tablespoons (2 packets) of Knox gelatin?

  5. I just made these using Dr Oetker powdered gelatin - under 2 tbsp in a packet but set just fine! Great recipe, though I didn't use quite as much sweetener (Xylitol). Thanks for sharing this recipe!
