Apple Pies

For the Filling:


1 tin unsweetenwed KOO Pie Apple Slices
1 tbs Butter
1 tsp cinnamon
1 tbs sweetener (optional)

Place ingredients in a pot and cook until the sweetener has been dissolved and the pie apple slices warmed through.

For the Pastry:


130g Sunflower seed flour OR Almond Flour
180g grated mozzarella cheese
Pinch of salt
2tbs cream cheese
1 egg
1 tbs powdered sweetener

1 extra egg for eggwash



Preheat oven to 200C.

Weigh the sunflower seed flour and add to microwave safe bowl.
Weigh out the cheese.
Stir the two together, then microwave on high for 1 minute.

Remove from microwave and mix together.
Microwave again on high for 45 seconds.
Mix well to combine, then add the cream cheese, sweetener and egg, mixing well to combine.
Add whichever flavors you enjoy to this dough too ie more cinnamon, etc.

Between two sheets of baking paper, roll out the dough to a large rectangle (about 40cm x 25cm).
Remove the top layer of baking paper, and place on a baking sheet.

Using a round form, cut out rounds of pastry and fill with pie apple slices.
 Gently fold over, and using a form, crimp the edges of the pies.
Mix the egg for egg washing and using a pastry brush, brush the tops of the pies. 
Bake for 30-45 minutes, or until pies are browned.


Recipe yields 12-14 apple pies, or 6 large pies.
