Ingredients:
1 small sweet potato
4 tsp butter
4 tsp sour cream
Salt and pepper
Chopped chives
Method:
Wash and bake sweet potato at 180C until tender.
Slice in half and allow to cool slightly.
Scoop out most of the sweet potato flesh, add butter, salt and pepper to taste, and mix thoroughly.
Scoop back into the halves.
Spoon sour cream on top.and garnish with chives
