Double Chocolate Granola Low Carb Granola

The perfect on-the-go choice for breakfast - Granola is easy to make, can be very tasty and lasts long.


This recipe uses chocolate two ways. Cocoa to roast with the nuts and seeds, and shaved to mix with the end product.

Ingredients:

70g Raw Almonds
30g Flaked Almonds
30g Blanched Almonds
150g Macadamia Nuts
50g Sunflower Seeds
30g Pumpkin seeds
20g Sesame Seeds
60g Coconut Flakes
2 tbs Erythritol
1 tbs Cocoa
2 tbs Coconut oil
100g Caring Candies OR 85%+ Lindt - whichever you prefer


Method:

Preheat oven to 160C.
Mix all nuts and seeds together in a bowl.
Melt Coconut oil in the microwave, then add the erythritol to the coconut oil.
Coat the Nuts and seeds with the cocoa, and then with the Coconut oil mixture.
Line a baking sheet with baking paper or a silicon mat.
Bake in Preheated oven for about 20 minutes - be careful of it burning - so check on it often - the coconut flakes will brown.
Remove from the oven and allow to cool completely.
While the nuts are cooling, dice/shave the chocolate into tiny chunks. 
Once the granola mixture has cooled, add the chocolate, then place in a jar to keep.
Enjoy With Yoghurt or on its own,
