Baked Chicken & Courgette Curry

So simple. So delicious...and what's better? Little dishes!!

Doing it in the pot vs doing it in the oven results in a thicker, richer, fuller flavored curry that you just HAVE TO try for yourself!


1-2 tbs fat of choice
2 tbs curry powder (I mix my own, look under spices tab)
Salt and pepper to taste
8 pieces chicken (smallish pieces)
1 tinned chopped tomatoes
1 tbs garlic
1 pack baby marrows


Wash and chop baby marrows, set aside.
In a pot, melt the oil, add the garlic and curry powder, frying for a minute.
Add the tinned tomatoes and mix well, add 1 tin water too.
Add the courgettes/baby marrow and salt and pepper and stir.
Add the chicken pieces to an oven proof dish, and throw the mixture over.
Bake in an oven at 180C for an hour. 

Enjoy with cabbage or call I rice!
