Banting Rhubarb Cocktail - Bragitta Shay Chandler



"So we were invited to a braai and I was wondering what I could drink. So I chopped up rhubarb and put it in a jug  with xylitol and microwaved it. Then I added ice, the juice of half a lemon and two tots of vodka and topped it up with water. This will be my drink for the duration of the braai. It tastes delicious!"

Ingredients:

1-2 stems of rhubarb, chopped
Sweetener to taste
Ice cubes
1/2 lemon, juiced
2 tots vodka

Method:

Place rhubarb and sweetener in a microwave safe bowl and microwave on high for about 2-3 minutes. 
Add ice blocks, the juice of 1/2 a lemon, 2 tots of vodka and top it up with water, mixing well.
Strain and serve!
