Banting Cream of Mushroom Soup

Quick, simple, tasty, warming soup!


Ingredients:

250g sliced mushrooms
125ml cream
1 tap thyme
1/4 chopped onion
1 cup chicken broth, or water
1 tbs butter or equivalent fat

Method:

In a pot, melt the fat, then brown onions and mushrooms.
Add the thyme and broth or water, heat through. 
Place in Liquidizer and pulse until smooth.
Put back into the pot along with the cream, bringing it to the heat just before it starts boiling, take it off the heat and serve!
