Banting Beans Soup

Beans are OK occasionally IF you prepare them properly.

You need to soak them  changing water often, then cook them prior to using them in your dish. They are still orange list, but this is what makes it orange list and not red list.


150g soaked and cooked speckled beans
2 whole turnips
2 carrots
2 celery stalks
1 leek
1 pack bacon bones (or other bones)
200g fatty bacon (or mince or other fatty meat)
Salt and pepper to taste

In a pot, fry off the bacon or fatty meat.
Add the bones.
Wash, Peel and dice the vegetables.
Add the vegetables and beans to the pot and sweat them off for 5 minutes.
Add 1 and a 1/4 liter water to the pot and cook for 2-3 hours, or in a pressure cooker, or in a hay bag.
Once it is done, use a masher and mash some of the vegetables.
