Sunflower seed hot cross buns

Ingredients:
200g sunflower seed flour
2 tsp baking powder
5 tbs psyllium husk
2 tbs sweetener
2 tbs mixed spice
2 tsp cinnamon
1 lemon or orange zested
2.5 tbs apple cider vinegar
3 egg whites
500ml boiling water
Butter or holsum to grease

For the crosses:
1 egg white
1 tsp sweetener
1/2 tbs coconut flour

For the glaze:
Water
Sweetener

Method:
Preheat oven to 180C.
Mix dry ingredients together (incl peel).
Add egg white mixed with apple cider vinegar until it is well combined.
Add boiled water but do not over mix.
Divide into 4.
Dampen hands, and form dough into balls and place in well greased loaf pan.
Pipe crosses on top and bake in oven for 1 hour.
Once cooled, using pastry brush, paint glaze on top of hot cross buns.
