Chocolate Cupcakes

Very affordable to make - just use the Chocolate Ganache recipe posted to go with them, or make an easy Chocolate icing for the top!

100g Heba Pap
2 tsp baking powder
2 tbs Psyllium husk
pinch salt
3 tbs cocoa powder
4 tbs sweetener (or to taste)
3 egg whites
10ml vanilla
2.5 tbs Apple Cider Vinegar
250ml boiling water


Preheat oven to 180C
Line a muffin tray with 10 muffin cases.
In a bowl, mix together dry ingredients until well combined.
Add egg whites, vanilla and Apple Cider Vinegar and mix.
Slowly add the boiling water, bit by bit - do not over
Divide the dough into the 10 muffin cases then into the oven while dough still warm.
Bake for 45 minutes, remove from oven and allow to cool completely before handling.
