Ingredients:
1 lemon, zested and juiced
2.5 TBS Heba
2 tbsp sweetener of choice
1/4 tsp baking powder
1 egg
Method:
Sprinkle zest and 2 tbsp lemon juice into bowl.
Add Heba, egg and 1 tbsp sweetener, mix to combine
Add the baking powder and mix again.
Microwave on high for around 1 mins 30 seconds.
While in the microwave, use the coffee grinder to make powdered icing sugar from your sweetener.
Add little bits of lemon juice until the desired consistency is reached.
Remove the lemon cake from microwave.
Drizzle over the lemon drizzle and enjoy!
