Ingredients:
For the masala:
3 tbs Coriander Seeds
3 tbs Cumin Seeds
2 tsp Black Peppercorn
5-6 Cardamon
5-6 Cloves
1/2 tsp Turmeric
3 tsp cayenne pepper
Fry whole spices for a few minutes, allow to cool, then grind in spice grinder. Store for later use.
For the mix:
500g julienne veggies (carrots, baby marrow, pumpkin, etc)
500g chicken fillets, sliced
3-4 TBS of the masala mix
2 TBS coconut oil
1 cup cream
1 tin chopped tomato
Salt to taste
Method:
Melt coconut oil, add veggies and fry on medium heat for 7-10 minutes. Remove from pan.
Add chicken and fry to seal.
Add masala mix and sat and fry for a few minutes.
Add tinned tomato.
Add 150ml water and simmer on medium heat for 10-15 minutes.
Add cream, mix well, add veggies and allow to simmer for 5-7 minutes.
