Chocolate Cake - Mbali Mhlaba




Ingredients for cake:
2 eggs
2 tsp vanilla
2 TBS butter
2 TBS cocoa
4 TBS dessicated coconut
4 TBS xylitol
1 tsp baking powder

Method for cake:

Mix together well and microwave for 2-3 minutes in microwaveable dish of your choice.




Ingredients for frosting:

2 slabs 85% lindt
About 100ml double cream yogurt
Xylitol to taste

Method for frosting:

Break chocolate into pieces, add to yoghurt and xylitol in a microwaveable bowl, and microwave on high for 30 second intervals, mixing now and then until chocolate melted, then slather on cake.


Slice cake and enjoy!
