Low Carb Coconut Roti

Ingredients:

3/4 cup coconut flour

2 heaped tbs psyllium husk

1/4 cup melted coconut oil

Salt and onion powder to taste (optional)

1.5 cups boiling water


Method:


Mix flour, husk and Spices together in a bowl

Add melted oil

Add boiling water and mix with spatula

Divide dough into 5, work quickly as dough must be warm.

Roll between two pieces clingwrap into desired shape - I used side plate size.


Fry in oil of your choice for 2 minutes on each side.


Keep them from drying out by laying them between kitchen cloth until you are ready to serve.
