Chocolate Cupcakes

Ingredients:

150g sunflower seed flour or almond flour

1 tsp baking powder

2.5 tbs sweetener

1/4 cup cocoa

1/4 cup carbsmart high oleic sunflower oil or olive oil

2 large eggs

1/4 cup milk

Pinch salt







Method:


Preheat oven to 170C.

Sieve flour, baking powder and cocoa together.

Mix in eggs, milk, oil, salt and sweetener until a batter is formed.

Divide equally between a 12 muffin case lined muffin tray.

Bake for about 20-30 minutes until skewer inserted comes out clean.

Allow to cool completely before frosting.
