Large Low Carb Coconut Loaf


Ingredients:

140g coconut flour
100g psyllium husk
15 eggs
1/2 tsp salt
1 tbs honey
600ml warm water
2 packages instant yeast






Method:

Preheat oven to 180C
Grease and Line a baking tin with baking paper.
Whisk warm water, honey and yeast together in a bowl and set aside.
Separate eggs, and whisk egg whites till stiff. 
Whisk yolks till creamy.
Mix togerher flour, husk and salt.
Add yeast and yolk mixtures to the egg whites and fold in until all combined.
Add dry ingredients and mix until all combined.
Do not overmix.
Decant all into large loaf pan.
Wet hands and smooth the top over.
Bake for approximately 1hr20mins or until skewer inserted comes out clean.
Allow to cool completely before slicing.

  1. How many carbs for each slice?

  2. If you make 12 slices of the whole bread. 1 slice will equal to 14g of Carb, 11g of protein and 8g of fat. I used RMR meal tracker
