Purple Cauliflower Crunchy Salad


1 large purple cauliflower 
1 pack bacon
1 spring onion
80g firm mature cheddar
Handful nuts if choice, chopped
1 two dried crushed chillies
2 tbs banting mayo
2 tbs sour cream
2 tbs carb smart chilli
Salt and pepper to taste


Steam cauliflower until slightly less crunchy.
Fry bacon until crisp, then chop finer.
Slice spring onions, and finely chop the firm cheddar.

In a bowl, mix together mayo, sour cream, and carb smart sauce.
Mix cauliflower, bacon, spring onion, nuts and cheddar together with the sauce.
Sprinkle chilli on top and refrigerate for at least an hour before serving.
