Mini Peanut Butter Cheesecake


Ingredients:

3 tbs cream cheese
3 tbs cream
3 tsp peanut butter (sugar and salt free)
Alternatively you can use almond or macadamia butter
1.5 tsp sweetener(or to taste)
1/4 cup almond flour or heba or sunflower seed flour
1 tsp butter
Pinch gelatin
2 tsp boiling water
Few drops Vanilla

Method:

Whip cream with a whisk.
In a round bottom bowl, add gelatin and boiling water and whisk.
Add cream to gelatin mix and whisk again.
In a separate bowl, mix together 1 tsp peanut butter with flour, 0.5 tsp sweetener and butter.
Press down in bottom of cup.
Mix together cream cheese, remaining peanut butter, sweetener and vanilla, then fold in cream.
Pipe or spoon onto the top of the cheesecake base and refrigerate until set.
