Banting Shortbread made from Gem Squash - Kamba Mpenge

Gather all ingredients. Preheat oven to 180C.


Ground Brazil Nuts - alternatively use another but flour or sunflower seed flour.


In a bowl, whisk softened butter, then add vanilla and mix well.


Add sweetener and mix well


Add egg and mix again.


Add Gem Squash Puree and spices.


Add your nut flour and mix until combined


This is what the mixture should look like.


Spread mixture on a prepared baking pan.


Bake for Approximately 15 minutes, remove from oven and score, then put back into oven.

Bake for a further 15 minutes or until browned.
