Banting Banana Bread

Ingredients:

1 small RIPE banana (90g)
1.5 cups sunflower seed flour (150g)
1/2 tsp salt
6 tbs psyllium husk (30g)
1 tbs sunflower seeds (15g)
1 tbs sesame seeds (15g)
2 tbs sweetener
2 tsp baking powder (10g)
1 tsp cinnamon (3g)
1 tsp vanilla (5g)

100ml cream
3 eggs

Method:

Preheat oven to 180C.
Mash banana and mix with dry ingredients.
Beat eggs and add to dry mixture.
Add cream and vanilla and mix well.
Allow mixture to stand for at least 10 minutes.
Grease a loaf pan, place mixture into loaf pan.
Optional garnish: seeds on top
Bake for approximately 1 hour or until skewer inserted comes out clean.
