Flourless Banting Loaf


So simple, so versatile, and SO LOW CARB!

Ingredients:

8 large eggs
100g cheddar
Salt and pepper to taste
100ml cream or cream cheese
Fillings of your choice
I used:
3 slices Pastrami
1/2 red pepper
1/2 onion
2 tsp herbs


Method:

Preheat oven to 180C.
Chop and fry onion and red pepper until soft.
In a bowl, whisk eggs, cream, salt, pepper, then add all your fillings ingredients.
Line and grease a loaf pan and add the mixture to the loaf pan.
Bake for approximately 40-50 minutes - or until it no longer jiggles.
Slice when cooled.
Enjoy!
