Crispy Sweet Potato Rounds

Easy to make and delicious, but beware - these are orange list!


1 large sweet potato
2 tbs coconut oil
Salt and pepper to taste


Wash and slice sweet potato into rounds.

Place in a colander and steam over a pot of boiling water until tender but still able to handle. 

Heat the coconut oil in pan until hot.

Arrange the sweet potato in the pan and fry on each side until crisp.

Season with salt and pepper and serve warm!
