Coffee Cake - Nuna Ntosh

In a bowl mix: 1cup coconut flour add 1tsp bicarbonate of soda, 1tsp baking powder, pinch of pink salt, 3tablespoons of sweetener I used Suki, 3tablespoons of cocoa powder, drop of vanilla extract, disolve a spoon of coffee in 2tbsp of hot water, separate 2eggs and mix the yolks in the mixture plus add 1full egg and mix well, in a separate bowl beat egg whites with hand mixer until it's stiff then add in that flour mixture combine well and bake in the round container for 30minutes or till it's done at 180°. When done put aside to cool...

For cream: 1 1/2 cup butter soft, 3tablespoons of cocoa powder, 1/2 cup sweeter, spoon of coffee, drop of red food colouring, a bit of milk then beat with hand mixer till the mixture is smooth. When cake is coll cut it as u wish and put the cream as u desire.

Chocolate Cake - Mbali Mhlaba




Ingredients for cake:
2 eggs
2 tsp vanilla
2 TBS butter
2 TBS cocoa
4 TBS dessicated coconut
4 TBS xylitol
1 tsp baking powder

Method for cake:

Mix together well and microwave for 2-3 minutes in microwaveable dish of your choice.




Ingredients for frosting:

2 slabs 85% lindt
About 100ml double cream yogurt
Xylitol to taste

Method for frosting:

Break chocolate into pieces, add to yoghurt and xylitol in a microwaveable bowl, and microwave on high for 30 second intervals, mixing now and then until chocolate melted, then slather on cake.


Slice cake and enjoy!

Cheese Wors



Ingredients:

100g cheddar
500g beef mince
1 tsp worcester sauce
1 tsp brown vinegar
1/2 TSP salt
1/2 TSP ground black pepper
2 tsp coriander ground
1/2 TSP cumin ground
Sprinkle of nutmeg
50ml cold water

Method:

In a bowl, mix together ingredients well.
Allow to sit for 2 hours while preparing your sausage maker.
Stuff sausage and refrigerate.
Fry within a day or 2.

Beef and Butter Bean Soup






Ingredients:
750g meaty beef bones
1 tin butter beans in brine (no sugar in brine)
1 tsp salt
1 tsp pepper
1 leek, chopped
2 stalks and leaves of celery, chopped
1/2 bunch parsley, chopped
1 turnip, peeled and chopped
2 carrots, peeled and chopped
2 TBS butter
1 tin chopped tomatoes

Method:
Brown meat in pot, add vegetables and butter and allow to sweat down for abput 10 minutes.
Add salt and pepper and then about 1 liter water.
Bring to the boil and switch down heat to medium. 
Allow to cook for an hour, covered, stirring occasionally.
After an hour, add the drained butter beans and tin of tomatoes.
Cook for a further hour.
Using a masher, mash some of the vegetables to make the soup thicker - to your desired consistency.
Enjoy with added butter and a sprinkling of pepper.
